THE DOUGH

Our dough is made from Neapolitan pizza flour which is hand-kneaded before being slowly proved for around 24 hours. The dough is then hand-stretched to order.

THE TOPPINGS

Many of our ingredients are sourced directly from Italy to give customers a more authentic experience. Our tomatoes, salami and flour come from producers in Naples, our 'nduja from Calabria, fior di latte mozzarella from Campania and grana padano from the Po Valley.

THE OVEN

 

We use portable Roccbox pizza ovens that reach temperatures of 500 degrees! These are designed specifically for Neapolitan-style pizzas - producing those perfectly puffy, chewy and charred crusts for hungry customers in and around London.
